So, I´m always careful to store beets correctly. I cut leaves around 2 inches from the root as soon as they arrive in my kitchen. I keep the bulbs in the fridge for up to 10 days and store the leaves in a separate bag. I usually eat them within 2 days.Some of the nutrients in beets reduce with longer cooking time, as do their beneficial effects, as a result I eat them raw either as a juice, as mentioned in your article, or simply grated on a salad. Beetroot is also a delicious addition to risottos and a traditional accompaniment to mackerel.I hope you can find this useful.
