    While reading the benefits of beets, it’s mind-blowing and to be honest you have given me plenty to think about here. This post is so thorough that it opened my eyes to all sorts of information I wasn’t aware of!

    I do remember shouting when my urine is in red color and my mom calmed me down saying its because of beets I ate Lol.

    My wife is pregnant and the doctor asked to eat beets, she doesn’t like beets and finding them hard to eat. I shared your post and after reading it she said I will eat beets at least twice a week. Thank you so much and it means a lot to me.

Although I do not have higher than normal levels of glucose, my grandfather died with diabetes type 1. So I need to be careful with my diet and be alert to any symptoms of prediabetes. I have beets as part of my regular diet.Just to complement your article, nitrates in inadequately stored beet juice can convert to potentially harmful substance nitrate, as it can expose the beet to certain type of bacteria. So, I´m always careful to store beets correctly. I cut leaves around 2 inches from the root as soon as they arrive in my kitchen. I keep the bulbs in the fridge for up to 10 days and store the leaves in a separate bag. I usually eat them within 2 days.Some of the nutrients in beets reduce with longer cooking time, as do their beneficial effects, as a result I eat them raw either as a juice, as mentioned in your article, or simply grated on a salad. Beetroot is also a delicious addition to risottos and a traditional accompaniment to mackerel.I hope you can find this useful.

      You want to do everything you can to avoid diabetes. Beets help you avoid diabetes.
