Carrots contain beta-carotene which is the antioxidant that is powerful and is connected with lowering your risk of diabetes.

Research was done and showed that people with the most beta-carotene levels in their blood had over 30% lower levels of insulin than those folks who showed lower levels of beta-carotene.

Carotenoids can inversely affect insulin resistance, lowering blood glucose levels and aiding patients with diabetes in minimizing their spiking of sugar.

You have to be careful with carrots though. Carrots have been assessed a GI score of 41 which is moderate on the glycemic index chart. So while carrots are good for folks with diabetes or some who do not have diabetes, they are not as good as many other vegetables when it comes to lowering your blood sugar and controlling your diabetes.

Because carrots are rich in vitamin A, they are able to protect against free radicals, aid in your cell growth, and improve your vision. Studies were performed in the Netherlands revealed that folks of middle age who consumed the least amount of carrots were shown to have more than three times the decline in memory loss than those who consumed the most carrots.

Fiber is vital for your bowel health. It also helps in managing your weight and keeping your blood sugar levels under control. Fiber is good for your digestive system and it helps your appetite by helping you to feel full for longer periods of time. Carrots provide about 2 grams of fiber for you.

Cautions and Allergies of Carrots

So to reiterate about carrots and diabetes, you should be limiting yourself to carrots a few times a week. They are good for you, but not in excess amounts. Raw carrots are the best way to go as far as nutrition but cooking them is almost as good. that’s good for me because I like cooked carrots a lot more than raw ones. Carrot juice should not be on the list. (Too much sugar)

Carrots can cause allergic reactions in some folks who may be allergic to pollens. Also, where there are carrots that are grown in soils that are contaminated, there may be heavy metals contained and this could affect the quality and safety of the carrots.

  2. Hi Rob ran across your post while researching diabetes.

    My mother has it and I am trying to help her with her diet. I didn’t realize that carrots had so many great benefits.

    I may have to start eating more carrots myself, thankfully though I don’t have diabetes.

    Can you recommend a serving size for the few times a week that my mother would be eating them?

      Diabetes can be controlled as long as you follow a healthy diet and get enough exercise and stay away from stress! (Yeah, easier said than done, right?) 🙂

      The more I learn about this out of control disease, the more I realize that if we all knew then what we know now, I’m sure we would all be a lot better off.

      But anyway, there’s so much we can do now and we should. Carrots are excellent for us in so many ways. I would suggest no more than 3-4 servings of 1/4 cup at a time per week.

    • Hey Jacquie 🙂 Yes I think everyone remembers mom telling us to eat our carrots because they’re good for your eyes.

      But most of us probably only took that so far because carrots have so many health benefits other than your eyes.

      I’m not a big fan of raw carrots so I liked them cooked and soft. But for diabetics, one quarter of a cup daily is sufficient. Don’t overdo it!

    • Carrots are more than just for your eyes. They are beneficial for diabetes and lowering you blood sugar too.

      Most vegetables if not all are healthy for you. 

      I prefer carrots to be cooked and not raw but either way they are healthy.
