    I don’t like eggplants but after reading your article about the benefits eating eggplants, I will give it second chance, I was looking for a way to eat more food with magnesium and as you said eggplants are rich on it.

    • Hi Alejandra! I never ate eggplant. I would go out and order veal parmigiana but now it’s eggplant parmigiana because of the benefits it provides!
      The skin is especially healthy for you just as the pectin is in the skin of apples. The more of the healthier foods such as eggplant that we eat, the better off we are especially for treating blood sugars and diabetes.

I was also not a fan of eggplant, but my wife started to grow them in our garden last year, and we now eat eggplant a LOT more. Here in the Philippines where I live now, Diabetes is very rampant!     I have a Masters in Nutrition. I found your site to very factual and very well written. Your information on the nutritional value of the eggplant I find well researched, and informative. Very few people know about the many health benefits of an eggplant. Diabetes, Osteoporosis, skin hair and neurological effects are some of the many reasons it is considered a superfood. The topic of diabetes does get a lot of attention, in the way of drugs, and lowering carbohydrate intake. As far as type 2 diabetes there is not enough of sound detailed nutritionally advice, as you have given on this site. You have taken a food of value and provided very informative information; not just the came old school information. We need more, of this type of nutritional advice written about; The doctors are not as up to date as they need to be in the area of nutrition. I found this page to an excellent well thought website on curtailing Diabetes. You have performed a much-needed public service; I also enjoyed your theme layout. Interesting eggplants are hella fun to cook with making delicious meals and good health benefits I’m in. didn’t know the quality of this vegetable and what actually does especially if it controlling the blood glucose and insulin which it’s really essential for people with diabetes.       I never thought about how healthy eggplant is for you. Once I started eating it, eggplant became a regular in my diet.

  7. Isn’t eggplant a member of the nightshade family? Nightshades create
    inflammation as well as tomatoes, peppers, potatoes. If this is correct
    surely eggplant is not all that beneficial for diabetics or anyone. Please
    comment since I enjoy eggplant and would like to resume eating it as a
    diabetic.

According to the TimesNowNews.com: Eggplant can be easily consumed by diabetic people as it has a low glycemic index and it does not raise blood sugar quickly compared to other carb-rich foods. Eggplant is good because it is low in sugar content. I love eggplant as well 🙂
